It is the start of a new school year again and as always, I have been hustling around the house as busy as a bee in preparation for tomorrow; just hoping to have a smooth day finally (we all know how crazy the first few weeks of homeschool is when trying to find a routine). So I needed something quick, easy, and still delicious for dinner. After all, I am in no mood to have a sink full of dirty dishes, nor a messy stove to pick up. The first thing that came to mind was my super delicious Parmesan Chicken!
Chicken is a staple food in our home. It is cost efficient and cooks rather quick when thinned out. Plus it is extremely versatile; I can think of 10 things to do with chicken breasts in just a couple minutes. Preparing this dish is a 4 step process (3 just for the chicken) but each step is quick and painless. This recipe provides one of the most tender chicken breasts and is really fool-proof. In fact, it is so easy that it is one of the first recipes I taught my kids to cook.
I start by de-boning & skinning chicken 3 chicken breasts (I buy them this way because they are cheaper). I then slice each breast in half horizontally for 2 reasons; they cook faster being thinned out and my kids won’t eat a whole breast each.
*Hint: If your breast halves are still very thick, pound them out to about ½ inch thick
Next, I heat oil in my skillet as I prepare 3 dishes for the chicken bread line: 1 with flour. 1 with 3 eggs, mixed. And 1 with a mix of Italian seasoned bread crumbs and grated parmesan cheese.
Your oil should now be hot enough. I like medium heat but every stove & set of pans is different. The important thing is not to have your bread crumb mix burn. Go ahead and utilize your bread line and coat both sides of your chicken (flour, egg, bread crumbs) then place into your skillet.
Each side will take about 3 minutes to cook. This is a good time to begin preparing your sides. Once each side of the chicken has a beautiful golden brown color, place onto a baking sheet and repeat the process until all chicken is on the baking sheet.
* I wipe off excess crumbs in the pan before adding more oil. This prevents the next batch from catching the darkened color from those already crisped bits.
Next, you need to prepare the sauce, which is another simple task. I use my ninja processor to finely chop ½ an onion- Yay for no tears! Saute the onions for 2 minutes and then add in the crushed tomatoes. Mix this up well and then add all of your seasonings. Stir well, cover (to avoid kitchen splatter) and simmer for 5 minutes. Remove from heat and stir in parmesan cheese.
Spoon sauce onto chicken. Top with a desirable amount of mozzarella cheese. Place in the over to broil for 5 minutes, or until you get the desired color and crispiness on your cheese topping.
This is my favorite side for Parmesan Chicken. So this isn’t a necessity, but it is the perfect addition! It is super simple too… just cook up your favorite pasta. We use Angel Hair noodles for this. Then finely chop 5 medium cloves of garlic (the ninja mixing tool is perfect for peeling those garlic cloves) and saute them in ¼ cup of butter. When the noodles are cooked toss them into the garlic butter and add a dash of salt for some flavor. Wah-lah! The perfect thing to serve your parmesan chicken over!

3 Chicken Breasts- boneless, skinless 1 tsp Salt 1 Cup Italian Style Bread Crumbs 1 tsp Pepper ¾ Cup Grated Parmesan + ¼ Cup Parmesan (sauce) 1 tsp Italian Seasoning Oil 1 Tbsp Basil Mozzarella Cheese 1 tsp Oregano 1 Cup Flour 1 ½ Tbsp Garlic Powder 2 Eggs 28 Oz Can Crushed Tomatoes ½ Onion- finely chopped
- Cut chicken breasts in half horizontally.
- Heat 3 Tbsp oil in skillet.
- Coat chicken: flour, egg, bread crumb mix.
- Fry for 3 minutes on each side on medium heat.
- Place on cookie sheet.
- Top with sauce & mozzarella.
- Broil for 5 minutes or until the desired color.
- Saute onion for 2 minutes.
- Add crushed tomatoes & stir.
- Add Seasonings & stir.
- Simmer for 5 minutes.
- Remove from heat and add parmesan cheese
Serve on top of pasta & side of salad.
